Regina Atchade --
West African cook
Born in a big family with seven brothers and sisters, Regina and her siblings were taught to cook by their mother when they were very young.
Tali tali
was a popular dish that they would cook. Flour, yeast, sugar, and water, are the ingredients for this simple staple that would last two days for all her children to eat.
Regina says that her cooking helps her to teach her children where their parents are from. The culture is important to them. "A lot of Black Americans here, there's some of them who really want to know the background of their great-grandparents... They cannot even say -- we are from the east, we are from the north -- they cannot say. It is just so sad."
